Prior to the exercise: boil or steam potatoes (with peel, approximately 250g per participant), let them cool down, put them in a bowl (without a lid on) and store them in the fridge till the next day.
Wash your hands and gather around a big work surface. Start peeling and mashing the potatoes. Make a little hole in the mash, add egg yolks (one per participant), semolina and white wheat flour (just a little) as well as nutmeg and salt. Mix the ingredients and gently knead them into a smooth dough (add more flour flower if the dough is to moist). Separate the dough into smaller pieces. Roll the pieces into snakes as thick as your fingers. Now cut the snakes into small gnocchi and shape them to your liking. Carefully simmer the gnocchi in boiling salt-water till they rise to the surface. Serve them with brown sage-butter, poppy seeds and parmesan.
